A medium apple (150 grams) provides 66 calories. Apples contain vitamin A and C, calcium and phosphorus and significant amounts of potassium. An average apple provides nearly 4 grams of dietary fiber and most of that is cholesterol-lowering soluble fiber. The complex carbohydrates in apples provide plenty of slow release energy.

Apples should be firm, crisp, bright, and well colored, free of blemishes and bruises with taut skin. If possible buy apples loose. Flavor depends upon variety and is also influenced by the stage of maturity at which the fruit is picked and how the fruit is kept. Apples keep up to two weeks in a refrigerator and only days polished and placed in a bowl. For long term storage wrap in paper and place apples in a single layer on a shelf in a cool, dark, airy place such as a root cellar or garden shed.

Apples add additional flavor to any meal. Try cinnamon apples or apple sauce with cottage cheese on toast for a complete breakfast. Fresh apples or apple slices dipped in lemon juice to prevent browning are lunch time favorites. Add apple juice or cider to your favorite pot roast. Roast apples with autumn vegetables such as carrots, potatoes and winter squash. Carmelize applies with onions and parsnips for an excellent side dish. Apple are an excellent addition to any autumn salads; try adding apples to your favorite coleslaw. Cube apples and serve with granola and yogurt or slice apples into any flavored gelatin for a healthier treat. What would fall be without America's favorite apple pie? Apple crisp and baked apples are excellent deserts with a few less calories! Don't forget you can bake with applesauce. Substitute 1 cup applesauce for 1 cup cooking oil.
