What is small, yellow, and grows on an ear? Corn of course! Corn is a low fat, cholesterol free and saturated fat free food that can be used in so many ways. Corn is also a good source of the antioxidant vitamin C. Corn has a number of health benefits. It reduces the risk of some cancers, coronary heart disease, and hypertension. One medium ear of corn contains only 75 calories and 1 gram of fat! There are many ways to cook corn. It can be simply boiled for a couple of minutes or steamed for a fuller flavor. Yes, a microwave can also be used for us who are always on the go. For those summer campouts try grilling the ear of corn with or without the husk. For days when a grill can't be use, an oven set at 500 degrees will do. You can also remove the corn from the ear by holding the ear upright and cut down each side.

Whether you like you corn boiled, steamed, grilled, creamed, popped, in muffins, on a salad or in a soup be sure to use freshly grown corn from New York State.

Don't forget that you can do more with corn than just eat it. You can decorate with it and visit a New York corn maze.
